Merry Christmas!

Merry Christmas Everyone!

I was sent an email last week from a friend that said it is now considered politically incorrect to say "Merry Christmas". I'm not joking! I guess "Happy Holidays" is the way to go so as not to offend anyone.

I truly don't want to offend anyone but I find such joy in wishing people Merry Christmas. It is the time of year we celebrate the birth of our Lord and Savior Jesus Christ and I am so happy for the gift we all were given.

I also got an email from a sweet listener that said, "I'm not ashamed to tell you Merry Christmas!" I feel the same way. I hope you and your family have a wonderful time of enjoying each other's company and being thankful for all the blessings we have.

In spite of the economy and everything going on in the world we still live in the greatest country on earth and enjoy freedoms like no other. We have the freedom to say Merry Christmas and so, if you'll allow me, I would like to wish you a Merry Christmas!

I Love Autumn!



Whether you call it autumn or fall it's still the same...such a great time of year and season! The main heat of summer is gone along with the humidity, and is replaced with a clean, crisp sometimes brisk feeling in the air. I don't know if its because it reminds me of going back to school each year while growing up but I'm ready to settle in for the season and get ready for the holidays coming before we know it.


I read a survey that said couples start dating and fall in love in the fall more than any other season. That makes sense to me.


I am so happy to be living in a part of the country where I get to experience all four seasons every year...3 months of each! I lived in Southern California for 5 years in Orange County and loved it but I missed the seasons. I felt like I was in a 5 year endless summer and I was exhausted and wanted it to settle in for the winter! LOL By physically experiencing all four seasons I know for sure that a year has passed in my life. It helps me to be present in each season.


So here we are in fall (or autumn) and I wish you a very happy fall season! Is it time to light the fireplace yet? Just a few more weeks! Such simple things excite me but it's the simple things that are the sweetest.

By Request---Potato Salad Recipe

Well...after my last blog about the 4th of July and my mom's potato salad I was happily surprised by the response. Many of you are curious now about her recipe. Soooo I called my mom yesterday and ask her if it would be okay if I put her recipe up on the web. She said sure. My mom is one of those people who finds joy in cooking. I wish I would have gotten that gene but it skipped me. I am a decent cook but she is HAPPY cooking and does it well. So here is the recipe and I really want to know if you make it what you think.

NELLIE'S WEST TEXAS POTATO SALAD

6 to 8 Small to Medium Potatoes
5 Eggs
4 Celery Stalks, chopped
1 Small Onion, diced
5 to 7 SWEET Pickles, cubed
3 Tbsp. Miracle Whip Salad Dressing
3 Tbsp. Mustard
Salt and Pepper to taste
Paprika for garnish

Boil potatoes with skins on for 30 minutes or until tender. Drain and pour cool water over potatoes to stop the cooking process. In a separate saucepan bring water to a boil and boil 5 eggs for 15 minutes. Drain and cool. Peel potatoes and cube. Place potatoes in bowl and add celery, onion and pickles. Chop 4 of the hard boiled eggs and add to potato salad mixture (reserve 1 egg for garnish). Sprinkle with salt and pepper. Add salad dressing and mustard. Toss ingredients and mix completely. (May add more salad dressing if desired.) Sprinkle top of salad with salt and pepper. Cut remaining egg into 5 slices and fan on top of salad. Sprinkle paprika for garnish.




When I get together with friends for cookouts they always ask me to bring potato salad. I think they find it unique that my family uses sweet pickles in it. It's a surprise when you bite into it but people seem to love it. Maybe this blogging thing isn't so bad after all! Don't encourage me about this recipe thing...or next I'll blog about Great Granny Susie's Pound Cake!

4th of July Holiday!

What a great time of year! This is my favorite summer holiday for so many reasons. It's a great reason to get together with family and friends and cook out and watch fireworks, but more importantly it makes me appreciate the freedoms that we have here in America.

I am so aware of the fact that we enjoy freedoms that other countries don't. While I have been in radio for many years, doing Christian radio again for the last 4 years has shown me first hand what a powerful thing music can be in people's lives. Sometimes a song can reach someone hurting when they won't talk to anybody about it and feel very alone. I've seen God use a song to pull someone back from the brink many times. To know that someone's life was changed is so satisfying to me. I get to see God move every night. I am blessed. So this 4th of July I am celebrating the freedom's we enjoy in this country. Especially freedom of religion.

It's also a great excuse for me to make my mom's recipe for Nellie's West Texas Potato Salad! So happy 4th to you and if I could I'd give you a big spoonful of potato salad!

Blog!

BLOG. What an odd word to describe writing down random thoughts and moments in time on the internet. Actually the word comes from WEB LOG. Abbreviated to BLOG.

I must admit this is my very first blog. I don't have myspace or facebook and just got a home computer a few years ago. I know...get with it Jami!! It's just that with being around radio equipment all day in the control rooms I would rather be working in my flower beds or walking or talking to a friend on the phone.

I am excited about our new website going up and understand the need for all the on-air personalities to blog. There's that word again. The company even had new photos of all of us taken for the new website. Who knows, maybe it will end up being fun and I can include pictures and interesting website links and all kinds of things on this blog. There's that word again.

It's amazing how God stretches us in different areas of our lives to teach us new things. Here's to a new adventure! For me today it's in the form of a blog. Heaven knows what wonderful things He wants to teach you today. I hope it's something great!
